Academy kitchen:  
We baked Classical Sponge Cake.

Mise on plase.Brake eggs in mixing boll, then mix with balloon wisk .Add the sugar half, half and wisk it, till soft ribbon. Then add flower. Then dissolve coffee in a bamerie and add it to mixture and fold it in slowly.If you mix the egg, the air will go out and fall flat. The mixture will be full ribbon.Soft / puffy white mixture,if you make a 8 it will fall slowly in.
